- 1.5 pounds tomatoes (mix different types)
- 1 large yellow onion
- 4-5 cloves fresh garlic
- 3 Tbsp olive oil
- 4 cups vegetable stock
- Crushed red pepper flakes to taste
- Salt & Pepper to taste
- 4 basil leaves
Preheat oven to 350 degrees. Line baking sheet with tin foil. Quarter tomatoes and onion. Peel garlic toss these ingredients with olive oil and spices roast the veggies on sheet for 35 mins. Let cool for about 5 minutes. Throw all veggies in a pot on med-low Add vegetable stock, bring to a simmer. Use an immersion blender to blend. If you want, top with vegan cheese and croutons. Enjoy!
