Cinco de Mayo Recipes: Hot Salsas

The Cinco de Mayo celebration continues! Check out these salsa recipes from our friends at Yahoo Shine.

Green Tomato Salsa: This slightly sweet sauce combines the tartness of the verdant fruit with fresh corn and ripe red tomatoes. Be sure to let it chill for at least an hour to let the flavors mix. 


  • 8 ounces green tomatoes, chopped
  • 8 ounces ripe red tomatoes, chopped
  • 1 cup fresh corn kernels 
  • 1/4 cup snipped fresh chives
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoons salt
  • 1/8 teaspoon coarsely ground black pepper


 Pineapple Tomato Salsa: The sauce combines sweet pineapple with tarragon. 

  • 1 pound ripe tomatoes, chopped 
  • 2 cups chopped fresh pineapple
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons chopped fresh tarragon leaves
  • 1/2 teaspoon salt
  • 1/8 teaspoon coarsely ground black pepper


Sicilian Citrus Salsa: Combines sweet, sour, salty, and savory and incorporates unexpected ingredients, including green olives, fennel, and oranges.

  • 3 oranges, peeled and diced
  • 1 1/2 cups finely chopped fennel
  • 3 tablespoons chopped green olives
  • 1 tablespoon extra virgin olive oil 
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper


Sweet 'n' Tangy: Throw cooked red beets into the mix. That sweetness is offset by the kick of jalapeño in this nontraditional sauce.

  • 1 package (8- to 9-ounces) red beets, whole, unseasoned, precooked, and peeled
  • 2 stalks celery, diced
  • 1 jalapeño chili, seeded and finely chopped
  • 1/4 cup chopped fresh cilantro leaves 
  • 3 tablespoons fresh lime juice
  • 1/4 teaspoon salt
