Padma Lakshmi's Pondicherry Lentil Salad

Makes 6 servings

Ingredients:

  • 2 cups beluga black lentils
  • 1 Fuji apple, cored and diced
  • 1 yellow bell pepper, diced
  • 1 large jalapeno pepper, diced
  • 1/2 cup olive oil
  • 1 tbsp balsamic vinegar
  • juice of 1 1/2 ripe lemons
  • 1 tsp salt
  • 1 cup loosely packed, chopped flat leaf parsley
  • 1 tsp sesame oil
  • 1 1/2 tbsp minced fresh ginger
  • 1/4 cup shredded unsweetened coconut

Directions:
Wash the lentils and soak them for 2 hours in tepid water; drain. In a deep pot, add 8 cups of water to the lentils, bring to a boil, cover, and cook on low heat for 20 to 25 minutes. Rinse the lentils with cold water and drain. Make sure the lentils are cooked but firm, not mushy. In a large bowl, mix together the lentils, apple, bell pepper, jalapeno, olive oil, vinegar, lemon juice, salt, and parsley. Stir and set aside in the fridge. Just before serving, heat the sesame oil on medium-high heat. When hot, roast the ginger and coconut for a few minutes until golden and toasty. Sprinkle this garnish over the lentils and serve immediately.

Unlike most beans, lentils generally do not require hours of soaking! I also noted errors in the printed recipe as other viewers. One more item; it would be MOST helpful if you would include nutritional information for those on diets. I passed over this recipe because of errors and lack of information.

padma's lentil salad had toasted mustard seeds i believe that weren't in recipe. seeds go in hot oil and pop cover so these don't pop on you careful burn easily

I made this delicious salad last night. I also noticed that the printed recipe was not like the one on the show. After viewing the video, I made the following changes....
After soaking the beans in tepid water for 2 hours, I found that it only took about 10 minutes to cook the lentils. (I cooked the first batch of lentils for 20 minutes and they are mushy so will be used in a lentil soup.)Keep checking the beans after 7 minutes or so.
I didn't include the jalapeno pepper and peeled the apple.
For the veggies I used 1c each of diced carrots, diced celery and diced red and yellow peppers combined to make the cup. Saute for 5-7 minutes in 1/4 c olive oil.
I followed the rest of the recipe. It turned out great.

I too remember seeing carrots and celery being sauted in olive oil. Watched the video twice now and realize this recipe is not the same. My son has recently turned vegan and I know he would really enjoy this. Please reprint the correct recipe. Thanks!

So many varieties of lentils, including very small ones, which are so tasty and can easily take the place of meat. My fav bean since I've been vegan 32 years...just placed 3rd in State (FL) in the 200, 400 & 1500 meters in the Senior Games, 5th oldest female to finish the Palm Beaches Marathon '10...so yeah, you get plenty of protein.

I think some steps are missing, I thought the veggies were to be sauted in olive oil first. I have tried to re watch the video. Sounds delish though. I will do what I think is right in cooking this. Thanks

Hey Team Ellen.

There is a mistake in the recipe. The veggies are to be sauteed before mixing it in with the lentils.

But this does sound good.
