Areaj D. sent us this recipe for Middle Eastern Lentils and Rice.
6 cups water
1 cup rinsed brown lentils
1 1/2 cup uncooked white rice
1 medium onion
1/2 cup olive oil
Heat 3 tbs of the Olive oil in a large pot. Add the lentils and stir over a medium heat for 4 minutes. Add the water, cumin, black pepper, and salt. Bring to the boil, then reduce the heat and simmer for 15 minutes until lentils are a bit tender. Then, add the rice, and mix with lentils.
Reduce heat and simmer until the lentils and rice are tender and all the liquid has been absorbed (probably about 15-20 minutes). Keep an eye on it -- depending on the type of rice and lentils, you may need to add more water.
Heat the remaining oil in a small frying pan, and fry the sliced onions until they are golden color, adding 2 tbs of sumac toward the end. Put the onions on top on the lentils and rice when serving. Enjoy!
