2 oz Irish Whiskey
3 oz Guinness
2 heaping tablespoons granulated sugar
1/4 oz Lemon Juice
Dash Angostura bitters
Put sugar into a dry pan and heat. Sugar will start to caramelize and turn brown. When it is fairly brown but not burnt, carefully add the whiskey (keep your face and body out of the way) and step back. If you are using a gas stove it will ignite right away in a big flame. If you are electric, you can use a long match. Let it burn for a couple seconds and add the Guinness. Flames should die down. Add the bitters and lemon. Take the pan off the heat, stir briefly (to melt the caramel) and pour into a coffee cup. Serve with cinnamon and an orange twist. For the orange peel, cut a nice big piece, face the peel toward the drink and squeeze the peel by folding it the long way (you can roll it a bit while you do this). Next, wipe the rim of the glass with the peel. After that, the choice is yours, discard, place it on the rim, or throw it in the drink.
