Seasoned Potato-Crusted Potato Bites
Tanya W. from Hedgesville, West Virginia sent in the recipe for Seasoned Potato-Crusted Potato Bites.
Ingredients:
2 large white potatoes
2 Tablespoons olive or vegetable oil
1/8 cup vegan ranch dressing
1/2 teaspoon chili powder
3 drops Tabasco brand green pepper sauce
1/2 teaspoon fresh ground black pepper
1/2 teaspoon sea salt
1/4 teaspoon celery salt
1 Tablespoon minced garlic
1 Tablespoon minced onion (can substitute onion flakes, to save the teary face)
1 Tablespoon dried oregano
1 Tablespoon dried basil
1/4 cup instant mashed potato flakes (just the flakes, don't make it into mashed potato).
If you wish, you can also add 1 Tablespoon of finely minced sun-dried tomatoes.
Directions:
Wash the white potatoes (peel, if you prefer, or pierce the skin several times with a fork if you wish to leave the skin on). Pre-heat the oven for 400 degrees. Cut the potatoes into bite-sized chunks (about 1" chunks). Put them in a large container with a lid. The container must be large enough to hold the potatoes, plus room to shake or stir. Add all of the rest of the ingredients.
Either stir well (which is boring), or securely attach the lid and shake vigorously (do a little dance, sing a song, make it fun!), until everything is well mixed. Grease a baking sheet or use butter-flavored non-stick spray. Remove the lid from the bowl of coated potato bites, and pour them onto the baking sheet. Spread them around, so there is a single layer of potato bites. Put them in the oven and stir/flip them a couple of times during baking; cook 20 min or until golden outside and soft inside. Enjoy!
