Vegan Mashed Potatoes
- 4 Russet potatoes peeled & cut into quarters
- 4 & melted vegan butter
- 2 T. chopped chives
- Salt & Pepper
- ½ cup cashew cream
Directions:
Using a four quart pot, or more, bring potatoes to a simmer.
Simmer until potatoes are tender.
Strain and return potatoes to the pot.
Allow potatoes to dry.
Mash potatoes with remaining ingredients and serve warm.
