Cotton Candy Avocado
For the vanilla sugar
1 cup sugar
1 vanilla bean
.8 ounce bag corn nuts
Peel and cut avocado into ½ inch cubes. Lightly salt the avocado.
Split the vanilla bean pod and scrape out the seeds. Add the pod and seeds to the sugar. Let sugar mixture rest for at least 24 hours so the sugar takes on the flavor of the vanilla.
Crush the corn nuts. Take care not to crush too much, you want more of a granular texture.
Place an avocado chunk on a bamboo skewer. Roll the avocado in the corn nuts to coat. Heat the cotton candy machine. Once hot, add the vanilla sugar mixture to the machine. When the cotton candy begins to form, dip the avocado skewer and twirl to cover.
