Roasted Carrots and Sweet Potatoes

Serves 6

Vegetables:

6 large carrots peeled
3 large sweet potatoes
Salt and pepper
3oz. maple syrup
Extra virgin olive oil as needed

Cut carrots and sweet potatoes into large, uniform pieces (any shape will work).  Toss vegetables in maple syrup, salt and pepper. Lay the vegetables flat on an oiled baking sheet and bake for 20 minutes in a pre-heated 420-degree oven.

Allow to cool slightly before serving.
